How to Make: Ice Cream Bread

Love ice cream? Your favorite dessert gets a new twist in this super easy guide to making ice cream bread, modified from this recipe to make it a little sweeter.  The best part is that you get to choose the ice cream flavor of your choice!  We recommend using butter pecan, pistachio, cookies and cream, or even cookie dough ice cream.

  • 1 cup softened ice cream, flavor of your choice
  • 3/4 cup self-rising flour (or regular flour + 1 tsp salt + 1 tsp baking powder)
  • 2 tablespoons sugar

Combine all three ingredients in a bowl and mix.  Scoop the batter into a small loaf pan (about 5.5 x 3 x 2 inches) and bake at 350 degrees for about 20-30 minutes.  Makes one small loaf.

Our Review:

I tried this with mocha almond fudge ice cream.  The final product was surprisingly not sweet.  If you'd like to make it more like cake and less like bread, I recommend adding more sugar (about 1/3 cup) and 1/8 of a stick of butter, melted.
